I love chocolate (and no, I don’t discriminate, I love dark chocolate and white chocolate) and I love peppermint, so I’m not sure if there is anything in the world that could combine to be better and more glorious than the holiday treat of peppermint bark.
Wait, I do know what’s better than peppermint bark. Protein peppermint bark.
That’s right, I have found a way to indulge guilt-free, well, almost guilt-free in the little taste of heaven that is the world of peppermint bark. I mean, if you’re going to be eating chocolate, you might as well get a boost to your daily protein intake while you do it, right? I may be biased, but I actually like my healthy protein peppermint bark better than the store bought, non-protein kind. The taste is amazing and I love knowing that, aside from the awesome indulgence of chocolate and sugar, eating my protein peppermint bark is kind of like drinking a protein shake, just awesome-er.
Better yet? Easiest thing to bake ever, and wait, yeah, that’s because it’s a no-bake thing. You can literally whip this glorious concoction within 10 minutes in the kitchen and with just 5 ingredients. Just follow these steps and start indulging in your chocolate with a healthy, protein-based twist:
Semi-sweet chocolate morsels, 1 bag
White-chocolate morsels, 1 bag
Chocolate Whey Protein, any brand
Vanilla Whey Protein, any brand
Take a baking tray, layer with tin foil and spray with non-stick spray. In a microwaveable bowl, empty the bag of semi-sweet chocolate chips into the bowl and put into the microwave on high for 1 minute. Remove bowl and add 3 scoops of chocolate whey protein, stirring in one scoop at a time until the protein has blended smoothly into the chocolate. The chocolate may look a little grainy at this point, which is okay. Put bowl back into microwave and back on high for 1 to 2 minutes. Remove carefully and stir. Allow to cool for 1 minute and then pour the chocolate / protein blend onto the tin foil to create the base layer of the chocolate.
In a separate bowl, empty the bag of white chocolate chips and put into microwave to soften for a minute. Follow the steps above, adding 3 scoops of vanilla whey protein into the bowl, stirring and placing back into microwave until fully blended. Allow to cool for 1 minute and then pour the white chocolate / vanilla protein blend overtop of the dark chocolate. This may be a lumpy process, so be prepared to use a spoon and possibly your fingers to spread the mix out evenly.
Sprinkle the crushed peppermint pieces over the top of your chocolate and vanilla layers to your preferred desire. Take the entire tray or cookie sheet and place in freezer for 10 minutes. Remove from freezer and jab a knife into the frozen chocolatey sheet to break up a few large pieces. Once you have a few large, jagged pieces, use your hands to break the protein peppermint bark into any many smaller, portion size pieces you would like. Finally, pour yourself a giant glass of unsweetened vanilla almond milk, grab a big piece of protein peppermint bark and enjoy!!!!
